What to look for at an artisan bakery

Freshness: is the bread baked on site that morning? Ask what came out of the oven last.
The signature bake: every good bakery has one – try it before judging the rest.
Value: compare portion and quality with the indicative prices on the menu page.
Service & allergens: staff should be able to answer allergen questions clearly.
